Guilt-Free Game Day Foods Beyond the Veggie Tray

Whether you’re cheering on your favorite team or just there for the commercials, these recipes will keep you satisfied without veering off track from your health goals. Cowboy Caviar 

Our Cowboys may not have made it to the Super Bowl, but we can still honor them with this flavorful dip! Cowboy Caviar is a Tex-Mex-inspired salad-turned-dip that’s bursting with colors and flavors. Packed with beans, corn, bell pepper, and cucumber, it’s a touchdown for taste buds and nutrition alike. Serve it with whole-grain tortilla chips or crunchy veggie sticks for a winning combination.  

This is a versatile dish, beyond our recipe you can also add feta cheese, avocado, and diced tomatoes as well! 

Ingredients: 

1 can black eyed peas, drained and rinsed 

1 can black beans, drained and rinsed 

1 can garbonzo beans (aka chickpeas), drained and rinsed 

1 can corn, drained 

1 cup diced bell pepper 

1 avocado, diced 

1 cup diced red onion 

2 diced cucumbers 

1/4 cup chopped cilantro 

Juice of 2 lime 

Salt and pepper to taste 

2 tsp chili powder 

1 tsp cumin 

Optional: Diced tomatoes, jalapeno, avocado, and feta cheese crumbles 

Instructions: 

In a large bowl, combine all the diced and canned vegetables, add cilantro and gently toss. 

Squeeze lime juice over the mixture and season with salt, pepper, cumin, and chili powder. 

This can be served immediately or refrigerated for an hour to let the flavors meld together. 

 

Everything But the Bagel Cucumbers and Sweet Peppers 

Put a twist on the classic bagel seasoning with this refreshing and crunchy snack. These Everything But the Bagel Cucumbers and Sweet Peppers are simple to make and will disappear quickly from your game day spread. They’re low in calories but high in flavor, making them a perfect guilt-free option for snacking. 

 

Ingredients: 

2 cucumbers, sliced into rounds 

2 cups sweet peppers, halved 

2 tablespoons Everything But the Bagel seasoning 

1 cup whipped cream cheese 

2 tablespoons plain Greek yogurt 

 

Instructions: 

Arrange cucumber rounds and sweet pepper slices on a platter. 

Combine whipped cream cheese and greek yogurt in a bowl.  

Spoon onto cucumbers and fill sweet pepper halves.  

Sprinkle Everything But the Bagel seasoning evenly over the vegetables. 

Alteration: Try this as a dip for celery or carrot sticks for an added variety.

Caprese Salad Skewers with Turkey Meatballs 

Upgrade the classic Caprese salad with these delightful skewers featuring turkey meatballs. These bite-sized appetizers are not only delicious but also protein-packed and perfect for fueling your game day excitement. Ingredients: 

Turkey meatballs (store-bought or homemade) 

Cherry tomatoes 

Fresh mozzarella balls or half inch slices of mozzarella cheese sticks 

Fresh basil leaves 

Optional: Balsamic glaze for drizzling 

Instructions: 

Thread a cherry tomato, a folded basil leaf, a mozzarella ball, and a turkey meatball onto each skewer. 

Arrange the skewers on a platter and drizzle with balsamic glaze. 

Serve immediately and enjoy! 

Alteration: Substitute turkey meatballs with grilled chicken or tofu cubes for a different protein option.
